Mississippi Mud Brownies

I live near the “Muddy Mississippi River” and it’s pretty muddy – but not THIS muddy! These look AMAZING!mississippi-mud-brownies-recipe

 

  • For the brownies:
  • 1 cup (2 sticks) butter
  • 2 cups sugar
  • 4 large eggs
  • 1 1/4 cups cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon espresso powder, optional
  • 1 tablespoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 10 ounces mini marshmallows
  • For the frosting:
  • 1/3 cup cocoa powder
  • 1/2 cup butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla
  • 1/3 cup milk
  • 1/2 cup chopped pecans

6 ounces Candiquik or white chocolate, chopped
1/4 cup creamy peanut butter
about 3/4 cup confectioners’ sugar
about 1/2 cup sprinkles
pinch salt, optional

Peach Bowl Frozen Custard
